Immigrating to Canada in 1974 and starting in the food industry, Hercules began to learn and understand the business. In 1993, the opportunity to purchase the Rendezvous restaurant in Abbotsford came along and he took it. After a decade of preparing Greek cuisine for the people of Abbotsford and perfecting the recipe, Hercules thought that everyone should be able to bring a little piece of Greece home with them. With Greek cuisine at the forefront of the Mediterranean diet, he wanted to show people that the love and ingredients we put into the dressing are just as important as the people we share it with. So, in 2004, he started selling the dressing in the restaurant. It eventually found its way to local produce markets and today, you can find it all over the Lower Mainland and Okanagan.
